The Eddy is the new wild card from the team at Toast South Coast - a café built around good coffee, big flavour and not taking life too seriously.
Continuing their long-time collaboration with ONA roastery, really good coffee sets the foundations. From there, there’s plenty of room to play: plant-based soft serve, Bueno cold foam piled onto cold brew, and the signature Toast staples they’ve become known for - think gently folded chilli scramble, avocado roses and dishes full of texture that are sneakily dietary-friendly. The all-day menu wanders through Asian-Australian flavours, with the Pork Belly Banh Mi cementing itself as a crowd favourite.
Dog-friendly and made for families - there’s a kids’ corner, a book and mug swap, and plenty of reasons to linger. Tiny rituals all take place a leafy, terraced garden in the heart of Merimbula - a much-loved space where kids can explore and you can sit back and watch the whirlpool of town life come and go.

Ex-drummer from the UK and source of oddly specific fun facts. Known for his nervous whistle when the kitchen gets wild. Cooks as well at home as he does at work. Always up for a chat. Loves a good bulk buy. -

Chef and Boss Lady
Argentinian Chef with hidden expertise. Fluent in Spanish, English, and Instagram reels. Fast talker. Smoother operator. The Eddy’s fearless leader.

Don’t let her sweet Swedish accent fool you – Alicia is a silent assassin. Detail-oriented admin warrior. She’s the backbone of cafe operations – holding everyone to account and getting things done. Throw her on the coffee machine on the busiest days and watch her wipe the floor.

Toast’s unofficial mum, plumber, fixer, art-collector and chief hype girl. Nicky keeps the wheels turning with big-picture vision and everyday hustle. Loves a good spreadsheet and smashing KPIs. Worships her team. -

Customer Experience Manager
Cool, consistent and full of heart, Scott is the quiet hero behind the scenes as well as out the front. From mentoring staff to styling grazing tables, he’s all over it like hot fudge on a sundae.
About The Area
The Eddy is tucked into the heart of Merimbula, a relaxed coastal town on the beautiful Sapphire Coast of southern NSW - surrounded by beaches, lakes, bushland and plenty of reasons to stay a while.
You’ll find us just off Market St, on the left behind Twyford Theatre as you turn onto Beach Street. Right in the centre of Merimbula Plaza. Look for the leafy garden space and the bright blue shopfront. Parking is available off Alice Street or anywhere along Beach Street.
